Beef-less Beef, Taco Salad Dream

This beef-less beef taco salad is my jam! We eat this meal a few times a week and the best part is if you don't want to try the beef-less beef because it is soy based, you can always substitute cauliflower rice instead by following the directions below.

Ingredients:

  • 1 pack of Trader Joe's Beefless Beef
  • 1 bag of mixed greens
  • 1/2 white onion chopped
  • 1/2 red onion chopped
  • 15 small bell peppers chopped
  • 1 tray of guacamole from Trader Joe's
  • 1 can of refried black beans
  • 1 bag of quinoa and black bean chips from Trader Joe's
  • Salsa of your choosing
  • White wine
  • Olive oil
  • 1 tbs Taco Seasoning 
  • 1 tbs garlic seasoning
  • 1 tbs cumin seasoning
  • 1/2 tbs chili seasoning 

Beef-less Beef Mix

In a frying pan, saute chopped white onion in olive oil until browned. Then add the beef-less beef package to the pan and break apart with a spatula. Mix onions and beef-less beef until the oil has lightly coated beef mix. Add taco, garlic, cumin, and chili seasoning and continue to mix well. If it seems a little dry add a tiny bit more olive oil to the mix. Cook for several minutes, add a lid to the pan and set aside to start sauteing the bell pepper and onion mix.

Bell Pepper Onion Mix

In a separate pan add olive oil and red onion. Saute until onion is browned and add in bell peppers. When the bell peppers have softened add a splash of white wine and continue sauteing until wine has been absorbed and onions and peppers are dark brown and caramelized. Set aside. 

Black Beans

In a microwave-safe bowl add can of refried beans, a few spoons full of salsa, and a little water if needed to thin out the beans and stir. We also add a little chipotle flavor tabasco for some spice. Heat in the microwave for about 2 minutes and set aside.

Salad

Now we have to put it all together! Add some lettuce to your plate. I prefer to chop my lettuce for any salad I am preparing. Add black beans, bell pepper mix, beef-less beef mix, and guacamole, on top of your lettuce. I like to take my chips and smash them up and add on top, but seeing as though that would have photographed pretty terribly, I nicely placed them on the side here. Who does that? No one that is who! LOL. 

That is it and yes, it is what dreams are made of! We make extra portions of the beef-less beef and bell pepper mix so we can make a few salads over the next few days. You can also use this mix for nachos, a loaded baked sweet potato or a breakfast scramble. Get creative! Enjoy.
