My Favorite Cauliflower Curry Recipe
What you need:
3 cans of garbanzo beans
2 cartons veggie broth
1 head of cauliflower
1 Tbsp tahini
5 Tbsp mild yellow curry powder
2 Tbsp cajun seasoning
1-2 Tbsp chilli powder
1 Tbsp salt
1 tsp turmeric seasoning
Red pepper flakes to taste. I do a pinch.
1 yellow union
7 garlic cloves minced
Directions:
Preheat oven to 425
Cut the tops of the cauliflower and spread on baking sheet. Toss in olive oil, curry powder, and salt. Roast until browned about 25 min. tossing half way through.
While cauliflower is roasting, in a large soup pot add chopped onion and garlic and saute in olive oil until browned.
Add veggie broth, all spices, tahini, and two cans of garbanzo beans.
Rinse and drain the remaining can of garbanzo beans and spread on a baking sheet. season with cajun seasoning and chills powder and add to the oven to roast for 10 minutes. Then set aside.
Use a hand mixer to blend base into a puree.
Add roasted cauliflower and roasted beans to the pot and stir.
Serve over rice and top with sweetened almonds from Trader Joes for the perfect blend of sweet and savory.
