My Favorite Cauliflower Curry Recipe

What you need:

  • 3 cans of garbanzo beans

  • 2 cartons veggie broth

  • 1 head of cauliflower

  • 1 Tbsp tahini

  • 5 Tbsp mild yellow curry powder

  • 2 Tbsp cajun seasoning

  • 1-2 Tbsp chilli powder

  • 1 Tbsp salt

  • 1 tsp turmeric seasoning

  • Red pepper flakes to taste. I do a pinch.

  • 1 yellow union

  • 7 garlic cloves minced

Directions:

  • Preheat oven to 425

  • Cut the tops of the cauliflower and spread on baking sheet. Toss in olive oil, curry powder, and salt. Roast until browned about 25 min. tossing half way through.

  • While cauliflower is roasting, in a large soup pot add chopped onion and garlic and saute in olive oil until browned.

  • Add veggie broth, all spices, tahini, and two cans of garbanzo beans.

  • Rinse and drain the remaining can of garbanzo beans and spread on a baking sheet. season with cajun seasoning and chills powder and add to the oven to roast for 10 minutes. Then set aside.

  • Use a hand mixer to blend base into a puree.

  • Add roasted cauliflower and roasted beans to the pot and stir.

  • Serve over rice and top with sweetened almonds from Trader Joes for the perfect blend of sweet and savory.
