Salted Caramel Chocolate Chip Blondies

With healthier and natural ingredients.

First of all, let me start by saying that I am not great at baking. I think it comes back to me being dyslexic and having to be precise with the measurements of each ingredient.  My first experience making this recipe was a testament to my horrible baking skills, when I accidentally added 1/4 cup of baking soda instead of 1/4 teaspoon of baking soda. Have you ever tasted a cookie made with 1/4 cup of baking soda? No? Well, I really don't suggest it. It took ten swigs of soda water, a handful of almonds, and non-stop laughing watching my husband have the exact same reaction as he took his first bite to rid myself of that awful taste. I am laughing now just thinking of it.

Even though I was defeated by baking soda the first time around, I refused to surrender! I tried this recipe again the next night, making sure to double and triple check the amount of baking soda. I have never baked with these types of ingredients before and I honestly can't believe how delicious this dessert was. Bradford ate nearly the entire dish and it was nice knowing that this treat is made with healthy and natural ingredients. Hope you love it as much as we do. 

Ingredients

caramel:

  • 1/4 cup coconut oil, melted
  • 1/3 cup almond butter*
  • 1/3 cup maple syrup

blondie:

  • 1/4 cup coconut oil, melted
  • 1/3 cup almond butter*
  • 1/3 cup maple syrup
  • 1 1/2 cups almond flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup melted coconut oil, melted
  • 1/4 cup maple syrup
  • 1 egg, beaten
  • 2 teaspoons vanilla extract
  • 3/4 cup chocolate chips

Instructions

  1. preheat oven to 350 degrees f.
  2. in a blender, combine the coconut oil, almond butter, and maple syrup. blend until mixed well and smooth. pour into an 8 inch cast iron skillet (or glass baking dish if you do not have a cast iron skillet).
  3. in a small bowl, combine the almond flour, salt, baking soda, and cinnamon. add the coconut oil, maple, egg and vanilla extract. stir until just combined. fold in chocolate chips.
  4. add to the skillet, smoothing out on top of the caramel.
  5. place in the oven and bake for 20 - 25 minutes, or until the blondie is cooked through.
