My Favorite Taco Salad

This taco salad recipe is my JAM! The best part is you can roll over these ingredients into other recipes like enchiladas, nachos, or tostadas! Yum! Here is what you need:

INGREDIENTS:

  • 1 pack of Trader Joe’s Beefless Beef

  • 1/2 yellow onion, chopped

  • 1/2 red onion, chopped

  • 8 small bell peppers, chopped

  • 1/2 packet of Taco seasoning

  • 1/4 cup veggie broth

  • 1 can refried beans

  • Lettuce, chopped

  • Any toppings like guacamole, sour cream, salsa, cheese etc.

  • I like to add some black bean chips from Trader Joes too!

DIRECTIONS:

  • In one frying pan, sauté 1/2 yellow onion in olive oil until browned.

  • Add the pack of beefless beef and break into pieces.

  • Add 1/2 pack taco seasoning and 1/4 cup veggie broth to the pan. Mix well and let simmer for a few minutes. Then remove from heat and set aside.

  • In another frying pan sauté red onion and bell peppers in olive oil until browned.

  • Empty beans into a bowl. We like to add taco bell sauce, chipotle tabasco, or salsa to our beans with a little cheddar cheese and microwave until hot.

  • In a bowl add your lettuce, beetles beef mixture, peppers, and beans. Top with guacamole, sour cream, salsa, chips, or any toppings of your choice and enjoy!
