Spaghetti Squash Lasagna Casserole
This is one of our favorite dinners you have to try! This spaghetti squash lasagna casserole is so easy and tastes just as good as your go-to lasagna but a lot healthier. Here is what you will need:
INGREDIENTS:
1 Spaghetti squash
1 Butternut squash
1 Jar of your favorite marinara sauce
1/2 Cup Ricotta cheese
1 Cup Cottage cheese
Shredded mozzarella cheese
1/2 tbsp Garlic powder
1 tbsp Italian seasoning
Black pepper to taste
Olive Oil
We love using these individual sized casserole dishes I found at Walmart. If you donβt have smaller casserole dishes, not a problem, you can use a larger dish as well.
DIRECTIONS:
Pre-heat oven to 400 degrees
Cut spaghetti squash down the middle (long ways), splitting it in two. Use a spoon and scrape out the seeds like you would a pumpkin and toss in the trash.
Peel your butternut squash like a potato and cut into cubes.
On one baking sheet, add the two spaghetti squash halves with the inside facing upward. Drizzle with olive oil and sprinkle with Italian seasonings, garlic powder, and black pepper. Add to the oven and roast for 20 minutes, flip over and roast for an additional 20 minutes or so.
On a separate baking sheet add your cubed butternut squash and drizzle with olive oil, Italian seasoning, garlic powder, and black pepper, and toss. Add pan to the oven, roast for 15 min and flip over to roast for another 15 minutes.
You will know when your spaghetti squash is ready when you use a fork to pull back some of the squash. If it is soft and pulls off the peele into little shreds easily, it is ready. If it is still a little crispy, return to the oven and roast a little longer.
When your spaghetti squash is ready, use two forks to shred the squash and scrape it off the peele. Add all of the spaghetti squash to a bowl and discard the peele.
Add cubed butternut squash, ricotta cheese, cottage cheese, and seasonings to the bowl and mix together.
Grab your casserole dish or mini dishes and begin by adding a thin layer of marinara sauce to the bottom. Then, add a layer of the squash mix from the bowl, followed by sauce, and mozzarella cheese. Repeat until the mix is gone or your dish is full.
Bake in the oven for about 10 minutes until cheese on top is melted and browning,
