This is the Orzo Soup recipe you have been asking for on Instagram and it won’t disappoint! Make a big batch and keep it in the fridge for some healthy meals throughout the week. Enjoy!


Ingredients:

2 cartons of veggie broth (8 cups)

1 cup chopped onion

1 cup chopped carrots

1 head of cauliflower

5 sprigs of fresh parsley

3 bay leaves

1 teaspoon chicken flavoring

4 gloves, minced garlic

1/2 tablespoon thyme

1 teaspoon salt

1 cup orzo pasta

1 can cannelloni beans rinsed and drained

1 cup stemmed and chopped kale

1 tablespoon oregano

Salt and black pepper to taste

Olive Oil

Directions:

  1. Preheat oven to 450 degrees

  2. Chop tops off cauliflower and spread on baking sheet

  3. Drizzle wit olive oil and season with oregano and salt and pepper, toss, and bake for 10 min. Flip and continue roasting until browned.

  4. In a large soup pot, sauté chopped onion in olive oil until browned and add minced garlic.

  5. Add broth, carrots, parsley, bay leaves, chicken flavoring, thyme, and salt. Bring to a boil and reduce to a simmer. Over with a lid and simmer for 10 minutes.

  6. Stir in Orzo, simmer, covered, 10 minutes more, stirring occasionally.

  7. Remove and discard parsley sprigs and bay leaves.

  8. Add beans, kale, roasted cauliflower, and oregano. Return to boiling; reduce heat, simmer, covered for 5 minutes.
